Come Dine With Me Black Bottom Chocolate Rum Pecan Pie

There was this lady... and how many times have you heard that line? But true, there was this lady down in Saugatuck, who made this amazing chocolate-bottom pecan pie. And honestly, we never even liked pecan pie all that much- that was always one dish best left to the grown-ups.  But we tasted hers and we never forgot it. And so, there we were, trying to come up with an amazing dessert for Come Dine With Me and all we could think about was Chocolate Pecan Pie. Forget that we make coconut cream pie, or peach pie, or Dinner On the Grounds Coconut Cake, or lemon bundt cake that tastes like it was made by fairies, or Angel Food Cake made by... yep, you guessed it, angels. Nope, we were so sure it had to be pecan pie. And this is what we made.


Black Bottom Boozy Pecan Pie
  • 1 pie crust- see Best Pie Crust under Coconut Cream Pie in June 2010
  • 3 ounces best quality dark chocolate bar broken into bits
  • 1 cup Golden Syrup (or light corn syrup)
  • 1/2 cup packed light brown sugar
  • 1/4 cup (1/2 stick) unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups coarsely chopped pecans  
  • 2 tablespoons rum 

Melt chocolate in microwave on high for 30 secs, stir and repeat until melted. Pour into baked pie crust.

 
 In a separate bowl, mix together syrup, sugar, and butter. Beat in eggs, one at a time, by hand to sugar mix. Stir in vanilla, salt, rum and pecans.


Now pour mixture over chocolate into crust. Bake at 350 F for 35-40 minutes, until pie is set. The middle will be jiggly, this is okay! Don't overcook your pie!

  2. Thanks, Helen, glad you like the recipe. As for Twitter, we've sort of delved into that, but our culinary skills are a bit better than our twitter skills. Promise we'll try to get that going a bit better!
